Grab that rotisserie chicken and chop it into cubes like a pro. Then, throw in a handful of celery cubes, one medium apple (chopped, of course—no one likes a whole apple in their salad), a couple of tablespoons of raisins (these little guys add a sweet surprise), some chopped nuts (pick your favorite crunch), a couple of spoonfuls of mayonnaise, and a sprinkle of salt and pepper to taste.

Once I whip up a batch, I fill these adorable molds, let them chill out, and then freeze away! When they’re frosty, I pop them out and stash them in freezer bags for those moments when I’m racing against the clock!
Just toss one or two cubes in the microwave for about a minute, and voila! You can whip up a BRC burrito in a snap, or jazz up some white rice with a sprinkle of cilantro, a squeeze of lime, some frozen corn, and a dash of salt and pepper. Total side dish heaven!
